Veneto Wine

This region is most famous for Pinot Grigio and Prosecco, however also produces a few varietals of red. Valpolicella comes in 4 types: Valpolicella DOC which is lighter and fruitier, Valpolicella Ripasso DOC which undergoes a second fermentation using the grape skins from Amarone and Receito for a fuller wine, Amarone della Valpolicella DOCG which is made from grapes that are dried on mats or hung from rafters resulting in a higher alcohol level wine, Recioto della Valpolicella DOCG also made from dried grapes however these are dried longer (100-200 days) and fermentation is stopped early, resulting in a sweeter wine.
